The latest retail disc of Mac OS X is 10.6.3, which you won't be able to boot to install a 2010 Mac Pro - it requires 10.6.4 build 10F2521 or later (see http://support.apple.com/kb/ht1159). If you have another 10.6 mac you can work around it by building an OS image with InstaDMG and the latest 10.6.7 update, but it requires a fair understanding of Mac OS X deployment to pull off.
