I just got an Amiga 2000 with a GVP G-Force 030 accelerator containing a 40MHz 68EC030. I see there are some people selling upgrade kits for GVP accelerators consisting of a regular 68030 and a replacement 50MHz crystal. Is it really as simple as soldering on a new crystal and changing jumper settings? What about the FPU? Anyone done this to their board?

It is not possible to upgrade the 40 MHz Version to 50 MHz!

The fastest I got out of mine was 44 MHz

You can clock the CPU at 50MHz or higher if your board have a separate curcuit for the FPU. My revision 3 board have 33MHz clock ticking a 25MHz marked FPU while a 60MHz clock are feeding rest of the board and over clocking an 40MHz CPU.

So it all depens on board design, CPU and FPU ability to handle higher clock rates than marked.
