Any recommendations where I should get the following, these were required for version 1 based on reviews I googled. I’m not sure if version2 still has these requirements but I’m guessing it does. —> Raspberry PI ZERO or Zero2 MicroSD Card 2gb or bigger thats compatible with raspberry pi *Mini HDMI cable or adapter

Any Raspberry Pi Zero version will work. Version 1.3 is going to be the cheapest if you can find it, but any Zero version will work.

The size of the SD card doesn't matter, you will need less that 1G for the RGBtoHDMI firmware. You don't need a mini HDMI to HDMI adapter, as that is already in the RGBtoHDMI CDTV V2 solution.
