Inspired by a superb thread on here I am looking for a suitable AGNUS chip to upgrade my A2000

You probably mean the 8372B (or equivalent 8372AB), i.e. 318069-03, as originally found in the A3000.
Unless by 8375B you specifically mean the possibly rarer 318069-18 (PAL) [318069-19 NTSC] which came later as a substitute for the above Agnus. The motherboard must be "Vbb fixed" to accept these, just like for the 318069-16/17 Agnii. If you don't intend to fix the motherboard, use the 8372[A]B. Some very late boards may be factory fixed.

EDIT: Just saw the thread you're probably referring to, and indeed it says 8375B but the part number is still 318069-03... so I guess that makes it equivalent to the 8372[A]B chips. Didn't actually know they also came under this name (8375B). Anyway, since no "Vbb" is printed on this chip, the rework doesn't apply.
