The Riser has RGB out so I do not need to pull the RF out of my AMIGA 32 and mod it for RGB.

Two questions.
1. What cable to use for that RGB port? COnnecting it via Scart.
2. I assume the RGB connector carries sound?

No you do not need to remove the RF as the RGB port is on the RISER supplied with the TF328

1. I dont think that you have scart in the USA but here in Europe this is the type of cable we use:

No the RGB does not carry sound, you still use the CD32 audio out
