Hi All,
I've decided to modernize my 3000 a little, and settled on getting one of these SCSI2SD adapters (http://www.codesrc.com/mediawiki/index.php?title=SCSI2SD).
So far, I'm impressed. It's pretty easy to setup with the PC utilities, it's small, and doesn't even need the power connector to run.
I put a 16GB card in it, and just got Workbench 3.1 installed. I set it up as two 8GB HD's and then partitioned it off as a few 2GB and a bunch of 4GB partitions. I'll probably have to try a higher level OS at some point. I also need to do some speed tests, but honestly for just tooling around, it's plenty snappy, and my 3000 runs nice and cool and quieter (next up, quieter PSU fan).
