Regarding the games you list as being included. With any Google Android device all apps and games are owned by the Google Play account holder, not the specific device. Are you therefore including a Google account with this Nexus 7 which holds all of these games? And you will therefore be transferring ownership of the Google account over to the buyer?

If not you need to remove the games from the list above, then uninstall them from the tablet, and finally restore the tablet to factory settings to wipe your Google account settings and restore the tablet to default new condition.
 
I think what Harrison is getting at is if you leave them on, anyone that buys it will have access to your Google account including any credit / debit cards linked to it to buy more things.
