Right so I got a trusty old 50-pin SCSI hard drive. Got it all plugged in. Copied everything from the existing IDE drive, no issues. Went to copy from the SCSI CDRW and it crashed exactly as before.
What a nightmare.
So just for a laugh I booted with no startup-sequence, mounted cd0: ran loadwb, didn't load anything else, and everything worked fine!
What the hell is 3.2 doing that causes SCSI to SCSI transfers to fail?!
